I know, I know, I haven't been for awhile. Why? Too many other things have taken my mind off of it. I have been minding other blogs. Other PEOPLES blog. I have found so many patterns, recipes etc. that they share. I love it.
We had our 35th anniversary on June 10th! I fixed a steak dinner for the two of us. We enjoyed it. :-)
Right now I'm working on my blanket ( crochet ) which I have been working on each night for about 1 year now. I just crochet a row or 2 each evening as we watch T.V. The yarn is called GLACIER BLUE and is 100 % Bamboo. I love it! It's PURE JOY to work on. It reminds me of the beautiful glaciers we saw on our cruise in Alaska 2 years ago.
On the radio they say we are in for some Severe weather tonight. I hope not. Thunderstorms are fine. But I don't like the severe stuff.
I better get going. I have some errands to run before I start sewing. :-)

Funerals & Family :-)
The picture is of our son and Aunt Marcella a few years ago!
We went to our Aunt Sister Marcella’s funeral today. She was buried at Oldenburg, Ind. Lovely! We had a beautiful for for this.
So many people came. we saw so many cousins. We now have a family reunion planned.
Aunt Marcella will be missed!!!

It's been at least a month since I was last posting on my blog. So I better try and get started again.
Today I was out with my parents and sister eating at Hofbrauhaus meeting a cousin of ours. It was good to see him!

Chocolate Eclair Cake

This measly corner piece was all that was left after us, the Clarks, and the missionaries (who made a surprise stop) devoured it. This was a Father’s Day request from John who loves eclairs. My sister-in-law Kristy made this for us when she came out to visit. It is very light which makes it easy to eat a TON of it! You can make it simple with Cool Whip and Hershey’s syrup (it’s still great this way) or go the extra step and make homemade whipped cream and chocolate sauce to make it unbelievable!
Chocolate Eclair Cake

Ingredients:
1 cup water
1/2 cup butter
1 cup flour
4 large eggs
1 (8 ounce) package cream cheese, softened
1 large box (5.1 ounces) vanilla instant pudding
3 cups milk
1 8 oz. container cool whip (just enough for a thin layer. I don’t use the whole container) or one batch of homemade whipped cream
chocolate syrup or homemade chocolate sauce
Instructions:
Preheat oven to 400. Lightly grease a 9″X13″ glass baking pan.
Eclair Crust: In a medium saucepan, melt butter in water and bring to a boil. Remove from heat. Stir in flour. Mix in one egg at a time, mixing completely before adding another egg. Spread mixture into pan, covering the bottom and sides evenly. *If the sides of your pan are too greased you won’t be able to get the mixture to stay up the sides so make sure to just lightly grease.
Bake for 30-40 minutes or until golden brown (Mine only took 25 minutes.) You may want to check it occasionally-you don’t want to overcook the crust, it will ruin the cake! Remove from oven and let cool (don’t touch or push bubbles down).
Filling: Whip cream cheese in a medium bowl. In separate bowl make vanilla pudding. Make sure pudding is thick before mixing in with cream cheese. Slowly add pudding to cream cheese, mixing until there are no lumps. Let cool in fridge.When the crust is completely cooled, pour filling in. Top with layer of cool whip however thick you want it and serve with chocolate syrup. *If you want to make this even better use homemade whipped cream.

Not FedEx… Beware…
I wanted to let you know about an e-mail I got, SUPPOSEDLY from FedEx saying they had a package for me. It said they were not able to deliver it to me. So they gave a me link that would tell me where to pick it up. I went there after looking at the link seeing that it was safe. I didn’t read close enough. As soon as I clicked on it, Norton said they blocked the Trojan Horse.
So be care of anything that says FedEx. Some is using the FedEx Emblem on E-Mail and infecting computers.

Was there really a St. Patrick? Definitely. Did he really drive the snakes out of Ireland? Probably not.
At age 16 (around A.D. 400), Patrick was kidnapped from his home on the west coast of England and carried off to Ireland. After 6 years, he escaped; upon returning home, he received his call (in a dream) to preach the Gospel. Although some Christians lived in Ireland at the time, it was Patrick who spread Christianity throughout the land and brought an organized church into existence.
We wear a shamrock on St. Patrick’s Day because Patrick used its three leaves to explain the Trinity. But, as far as we know, he never drank green beer!
